Italian Head Chef Gives Recommendations For Revitalised Menu At Frankie’s JBR
JBR's Frankie's Italian Bar & Grill's head chef, Matteo Guerra, is a passionate scholar of his country's famous dishes. A former head chef at Cavalli Club in Dubai, the globe-trotting gastronomist learnt his trade working throughout Europe and Canada for accomplished cooks, such as chef René Redzepi, at a two-Michelin star restaurant in Denmark.
Upon joining Frankie's in March 2017 the northern-Italian was immediately tasked with transforming the menu while maintaining the venue's decade-long reputation for high quality, authentic Italian food.
"Firstly we changed the layout of the actual menu, making it easier to read and choose each dish. We then worked on altering all the food techniques, bringing back some more traditional methods, while ensuring absolutely everything is home-made and fresh prepared daily in our kitchen," he adds.
Asked which dishes he would recommend for someone trying out the new menu, Chef Matteo gave some suggestions: "For starter, I recommend our trademark burrata, which includes delicate, fresh eggplant salad and basil pesto.
"As a main course, I recommend the lamb shank, which has been braised for two days, making it extremely tender and delicious accompanied with our special fregola, which is an ancient type of Sardinian pasta, quite similar couscous.
"Finally, for dessert, you must try our specially-created 'lighter' version of the Italian classic, Tiramisu, which I'm certain is guaranteed to become a favourite among our regular diners," he said.
Managed by RMAL Hospitality, the restaurant has thrived over the last ten years at its location in Al Fattan Towers on Jumeirah Walk, JBR, offering intimate dining and live entertainment options throughout the week.
"There are lots of restaurants in Dubai, but none like Frankie's, which offers an upmarket, authentic experience in a classy location full of both tourists and residents of the city," says RMAL Hospitality's Director of Operations, Eli Madbak. "There are also some great Italian chefs in this city, but Matteo was chosen this year for the role because of one thing – his cooking – and we are confident in building the fantastic new menu around his talents."
Chef Guerra's menu comes alongside the relaunch of Frankie's Comedy Cellar, which packs out the adjoining bar area every Saturday night with its 'dine and laugh' comedy night. Jazz and soul duo, Kevin and Donavan delight the diners from Wednesday to Friday with their smooth tones and classic Italian pianist, Maci, performs Saturdays and Mondays, with other entertainment announcements planned in coming months at the stylish restaurant.
