Chinese Cuisine World Championship Holder Signs Up For Gourmet Abu Dhabi

Tam Kwok Fung To Present Traditional Rural Dishes With Chinese Well-Being Focus

A former World Champion of Chinese cooking and a master of integrating Chinese medicine and ancient Taoist culinary techniques into his traditional rural dishes is the latest international masterchef to sign up for next month’s Gourmet Abu Dhabi gastronomic festival.

Tam Kwok Fung, now the Executive Chinese Chef of Macau’s ‘City of Dreams’ destination, will be serving up an epicurean experience at the Shang Palace in the Shangri-la Hotel Qary’at Al Beri from February 6-9 and will conduct a free-to-attend masterclass at the Armed Forces Officers’ Club on February 9. His Abu Dhabi dates come in the run-up to Chinese New Year, which is being celebrated on February 14.

“Tam Kwok is renowned for a culinary style of infusing ancient medicinal values to help preserve the body’s balance, longevity and health,” said Ahmed Hussein, Deputy Director General, Abu Dhabi Tourism Authority (ADTA), which is presenting the 15-day Gourmet Abu Dhabi festival. “Healthy eating is becoming very much a signature value of Gourmet Abu Dhabi 2010 with no less than three masterchefs noted for their distinct well-being cuisine now in the programme.”

Also in the Gourmet Abu Dhabi well-being line-up is Italian farmer, hotelier, masterchef and organic produce advocate Alfonso Iaccarino and Germany’s Cuisine Vitale pioneer Heinz Winkler, a proponent of the anti-ageing ‘Power of Nourishment’ culinary creations.

Tam Kwok is a much sought-after figure in the Chinese culinary world with a mastery honed over 25 years of experience gained in Hong Kong , mainland China and Thailand where he has prepared fine dishes for world leaders and royal family members from Thailand, Japan and Nepal.

Previously Chef de Cuisine at the Michelin-star rated Ying of the Altira Macauhotel, Chef Tam Kwok Fung says worldwide the dining trend is increasing becoming more attuned to natural produce.

“Substance over style is very much the vogue of diners’ choice dictated by natural ingredients from a healthy, chemical-free source,” he says.

Gourmet Abu Dhabi runs throughout 18 of the finest restaurants and outlets in Abu Dhabi, the capital of the United Arab Emirates from February 5-19. Its expansive programme features a stellar cast of award-winning masterchefs sharing a total of 22 Michelin stars, special guests, Canadian celebrity chef Bob Blumer and leading hospitality industry figures.
